Dave Campbell, owner and head chef at the Hungry Duck in Berry, shows Hayden Wood (aka Woody) around his farm and his vegetable garden and talks of his ideas on sustainability, and using local produce wherever possible, and the idea of using a whole beast whenever possible. He then fillets a whole tuna and cuts it up for an absolutely supurb sushi dish.
